Tasting Note

On the nose you can smell notes of sour cherries and violets. Earthy, dried herb background perfume. The palate is fresh and fruity, cherries again dominate the palate with fresh acidity making this a lovely summertime red. Light and lively. A medium bodied red.

Sourced from the King Valley and harvested from the 3rd week of March 2021. Hand picked.

10% Whole Bunch with the balance fully de stemmed and fermented into oak fermenters. The oak fermenter received a mixture of pump overs, rack and returns. Pressed on day 12 and put into older oak. The whole bunch portion was periodically foot plunged. And pressed separately to oak.

 

Wine & Cheese Pairing

For cheese pairings, you may want to try soft and mild cheeses such as fresh goat cheese or Boursin. These types of cheeses have a light and creamy texture that complements the wine’s acidity and fruit notes.

Another great option is nutty and savory cheese such as Pecorino or Asiago. These types of cheeses have a complex and sharp flavor that pairs well with the wine’s structure and depth.
